  • In the bowl of an electric stand mixer fitted with the paddle attachment, cream together butter and sugar. Mix in egg, then blend in egg yolk, vanilla extract and almond extract. Stir in vanilla pudding mix.
  • With mixer set on low speed, slowly add in dry ingredients and mix until combined (batter will seem dry at first but it will start to come together. Stir in 2/3 cup sprinkles.
  • Scoop dough out using a medium 1 1/2-inch cookie scoop (or 2 Tbsp at time) and shape into balls. Drop onto Silpat or parchment paper lined baking sheets, spacing cookies 2-inches apart. Gently press a few more sprinkles into tops. Bake in preheated oven 9 - 10 minutes.
  • Allow to cool on baking sheet several minutes then transfer to a wire rack to cool. Store in an airtight container.

    I’m making a batch of these cookies right now for a finger-food pot luck on Sunday (a post Lesson & Carols party). I used this organic sugar I got from Trader Joe’s which evidently must have a little bit of molasses in it as it was tinted brown (not as brown as light brown sugar but still kinda brown) and I did smell the molasses that must’ve been in it too and I also used the equivalent amount of Olivio-brand coconut oil spread instead of butter to save on fat. The batter seemed a little moist to me so I added a little more flour and took the baking time up to 15 minutes and the cookies look pretty decent. They’re a little more brown than the ones you have pictured in the blog but I kinda like having my cookies be a nice golden brown. I also sampled one and they’re pretty good. :-D

    I’m going to make these cookies but need to know about how many dozen it makes. I’m using a medium Pampered Chef cookie scoop

      Nope…you read right the first time…14 tablespoons. That’s 1 whole stick plus 3/4 of another stick (6 tablespoons). Very buttery cookies. That’s why I used an equivalent amount of Olivio coconut oil spread to save on fat. LOL!

    I just made the dough for these cookies. I followed the recipe to a T. It is extremely crumbly and dry. I’m not sure if the addition of an extra egg would help? I’m not even going to bake them. They crack into pieces on the cookie sheet.

      Just be careful when measuring the flour, it was likely packed in casing the dough to be too thick and dry. A little milk or egg would help. Sorry that happened!

    This sounds like a great recipe!!! My only problem is that I’m not very familiar with things like pudding mixes – would it be something like a custard mixture? If anyone could direct me towards any brand you could find in a common English supermarket, that would be great! Looking forward to making these!
